Pasta with creamy saffron salmon sauce
This dish is one my dad made quite often and I really love it! It’s as easy to make as tomato sauce and as quickly done too, but it feels a lot more fancy.
Great for dinner with friends and loved ones.
Ingredients for two servings
400g pasta
1 tbsp olive oli
200g smoked salmon
250ml cream (full fat or half and half)
one pinch of saffron
salt
pepper
Instruction
In a large pan bring water to a boil. As soon as it boils, add salt and the pasta.
While the pasta is cooking, cut the salmon into 1.5 x 1.5 cm pieces.
Heat oil in a large frying pan. Sear the salmon in hot oil for 2 minutes. Deglaze with cream. Add a pinch of saffron an season to taste with salt and pepper.
Let the sauce simmer until it is a little thicker.
Tip
Set aside 50ml of cream to thin the sauce if it gets too thick.
You can also deglaze the salmon with a little bit of white wine and add the cream afterwards.
